Codfish Croquettes
After reading this recipe, you're going to want to try these delicious cod croquettes. Now that we're slowly returning to normal after Covid, these croquettes are ideal to serve as an appetizer when you have guests at your house. The best thing is that you can make them fried or in the Air Fryer and they're just as delicious and crispy. In the photo you can see the ones I made in the Air Fryer on the left hand side and the ones fried in oil on the right hand side. To give it a Puerto Rican touch, I prefer to use cilantro vs. parsley (plus it's easier to get in the supermarket).

Ingredients
- 1 12-ounce package of cod
- 4 tablespoons unsalted butter
- 1/2 cup wheat flour
- 1/2 cup milk
- 2 cloves of garlic, chopped into small pieces
- 1/4 cup cilantro or parsley, chopped into small pieces (equivalent to a handful)
- Salt to taste
- 1/2 cup breadcrumbs (Panko Bread) or ground crackers
- 1 beaten egg at room temperature
Preparation
- The first step is to desalt the cod to remove excess salt. In a medium pot, place the cod in water and bring to a boil. Taste the cod, if it is still too salty repeat this step one more time. Then proceed to crumble the cod into small pieces.
- Heat the butter and garlic in a skillet over medium heat. Allow the garlic to brown and then add the cod. Mix the ingredients well.
- Add the flour, mix and cook for 3 minutes. This is to prevent the croquette from tasting like flour.
- Heat the milk in the microwave for 30 seconds and add it little by little to the mixture. At this point, a thick creamy mass begins to form that comes away from the pan.
- Add the cilantro and taste for salt. If necessary, add a pinch of salt.
- Place on a small plate, cover and refrigerate for 3-4 hours. You can also leave it overnight. This will help the dough to compact better and make it easier to form balls.
- Using a spoon, scoop up the mixture and form into balls. Dip them in the beaten egg and then in the bread.
- Fried : Heat a frying pan with oil over medium-high heat and fry the croquettes until golden brown.
- Air Fryer : Cook at 400 degrees for 10 minutes.
