Pear and Manchego Salad

On a trip to Washington, DC I tried this salad that I really liked because of the combination of flavors. The pear gives it a refreshing touch and the Manchego cheese elevates its flavor even more. The important thing for this recipe is that the cheese is at room temperature. room so it can absorb the truffle oil. The honey dressing gives a nice contrast to the blueberries and a sweet touch.

Ingredients
- 4 cups green leaves (lettuce, spinach, arugula, etc.)
- 1/2 pear sliced
- 1/4 cup walnuts (you can substitute almonds)
- 1/4 cup diced Manchego cheese at room temperature
- 1/4 cup blueberries (dried cranberries)
- 2 tablespoons of black truffle oil
Honey Dressing
- 4 tablespoons of olive oil
- 1 tablespoon white balsamic vinegar
- 1 1/2 tablespoon honey
- 1 crushed garlic clove
- salt and pepper to taste
Preparation
- In a small bowl, mix the Manchego cheese with the truffle oil. Let it sit for 10 minutes so that the cheese absorbs the oil.
- Wash the leaves, dry them and then put them in a large bowl.
- Prepare the honey dressing: Mix all ingredients in a container and stir with a spoon. If you use a container with a lid, you can shake it briefly.
- Proceed to cut the pear into thin slices.
- Mix the pear and the rest of the ingredients with the green leaves.
- Serve and add the honey dressing to taste.
