This recipe reminds me a lot of my childhood, especially when we used to make cottage cheese from freshly milked milk with my grandmother. For me it was quite an adventure to participate in this activity and the best part was when she let us create our own little piece to take home.
Ingredients:
- 6 cups whole milk
- 4 tablespoons of lemon
- 1 teaspoon salt
Preparation:
- In a large pot, bring the milk and salt to a boil.
- When the milk is boiling add the lemon.
- Let it boil for 30 seconds.
- Then let it sit for 15 minutes.
- Pour into a large strainer and let excess liquid drain for 30 minutes.
- Spoon cheese into 3-inch molds to shape and cover with foil.
- Leave in the refrigerator for 4-6 hours.
This cheese is delicious with warm sobao bread and combined with jams. It is very similar to Ricotta, the difference is the amount of salt used.
