Acerola Sorbet
This is the perfect and delicious recipe for today's long weekend Friday! I love sorbets because they are refreshing and perfect for summer. I had never made acerola sorbet before but since I already had the fruit I decided to give it a try and continue with recipes inspired by this fruit. The result was just what I expected! The photo does the dessert justice. The sorbet tastes just enough like acerola but since it has a simple syrup it helps to counteract the acidity of the fruit making it a light dessert.
Once served, I added a few drops of Tito's Vodka to give it shine and enhance its flavour a bit. Don't worry about the drops of vodka as the sorbet absorbs them and you can barely feel them when eating it.
You can see the recipe for acerola juice here . For this recipe I used unsweetened acerola juice as it is sweetened with the simple syrup.
For the sorbets I use some silicone molds that I bought on Amazon and I love them because they make the sorbet look really pretty when serving.
Ingredients:
- 2 cups unsweetened acerola juice
- 1/2 cup sugar
- 1/2 cup water
- Tito's Vodka
- Spearmint
Preparation:
- In a small saucepan, combine the sugar and water over medium heat to make the syrup. Bring to a boil until the sugar dissolves and turn off the heat.
- Let cool for 10 minutes.
- Add syrup to the juice and stir well.
- Pour the juice into the mold of your choice. In my case, I used silicone molds so that the sorbet would be in spheres and squares. Makes 10 spheres.
- Let it freeze for 10-12 hours.
- Remove from molds.
- Wait 10 minutes and serve in a glass or plate.
- Add the drops of Tito's Vodka and some yerba buena leaves and that's it!
